Here's Joan's recipe for a vegetable dish she says even kids will like.
And it's low-fat.
Squash Casserole
8 small zucchini or yellow crookneck squash (or some of each)
1 medium onion
1 stack celery
1 clove garlic (or garlic powder to taste)
1/2 cup self-rising cornmeal
1/2 teaspoon seasoned salt
3 Tablespoons liquid-style no-fat margarine
salt and pepper to taste
Mix salt, pepper and seasoned salt (and garlic powder if using) with the cornmeal.
Cut zucchini or squash into cubes. Dice finely the onion and celery.
Pour liquid margarine over diced vegetables and mix well. Sprinkle the cornmeal mixture
over the vegetables and mix to coat evenly. Spray a 2-quart casserole dish with nonstick
cooking spray. Put the vegetable mixture into casserole. Cover and bake at 350 degrees
until mixture browns a bit on the top.
TIP: Joan says she has finally found a spatula
that stands up to the rough treatment she gives during classes.
This one doesn't melt while stirring hot dishes, break while mixing thick icing,
or stain from even black food coloring.
